  1. Put a lump of bacon grease in a #7 cast-iron skillet and preheat in a 375-degree oven.
  2. Whisk together dry ingredients.
  3. Separately, whisk together wet ingredients.
  4. Fold wet ingredients into dry ingredients until just combined (some lumps are OK).
  5. Pour into preheated skillet and bake for 35 minutes or until a toothpick inserted in the center comes out clean.
