Ham and Bean Soup
  1. Rinse, sort and soak beans overnight.
  2. Saute onion and carrot in olive oil and butter in soup pot until onions are translucent.
  3. Add garlic to pot and cook 1-2 minutes more.
  4. Add all other ingredients except ham and beans and bring to a boil.
  5. Trim and dice the ham and add to the pot (add the bone to the pot, as well).
  6. Drain the beans and add to the pot and simmer for about 2 hours.
  7. When beans are tender the soup is ready. Remove the ham bone and bay leaves.
